Mediterranean Chicken with Sun-Dried Tomatoes and Artichokes

  • 1.5 lb chicken breást (thinly sliced)
  • 1/2 teáspoon sált
  • 1/4 teáspoon ground bláck pepper
  • 1/4 cup flour (you cán use gluten free flour)
  • 2 táblespoons olive oil
  • 8 oz roásted ártichoke heárts (dráined)
  • 6 oz sun-dried tomátoes
  • 3 táblespoons cápers (dráined)
  • 2 táblespoons lemon juice freshly squeezed
  • 3 táblespoons olive oil

  1. Seáson chicken with sált ánd pepper.  On á lárge pláte, dredge chicken in flour. 
  2. Heát 2 táblespoons of olive oil in á lárge skillet on medium-high heát.
